To come to the crêperie chez la Jeanne is to taste the pumps of yesteryear. In a room overlooking the Massif du Sancy and the Fontaine Salée.
The “pompes” (local pancakes) are made in the Auvergne tradition with a mixture of white flour and buckwheat flour, mixed with St Nectaire whey. This leavened dough is cooked on a cast-iron tile (the region’s traditional crêpière).
