Truffade, the emblematic dish of Auvergne

Ingredients

  • 1 kg potatoes
  • 250 g fresh Tomme de Cantal cheese
  • 50 g butter
  • 2 cloves of garlic
  • salt and pepper

Preparation

  1. Cook the sliced potatoes in salted water for 15 minutes. Drain.
  2. Melt the butter in a frying pan, add the potatoes and brown them with the crushed garlic.
  3. Add the thinly sliced Cantal tomme and mix well so that it melts over the potatoes.
  4. Season with salt and pepper and serve immediately.
